The Basics

How to hold an oyster
With the oyster in your left hand, locate the bottom the flat side or the shell (lid) and face it up. Next, find the hinge of the shell and point it down towards yourself.
Getting inside
With the oyster correctly positioned you can find the abductor muscle holding the shell shut - this is at a 2 o'clock position of the shell. This is where you want to cut, piercing the shell and cutting along the flat side to remove the "lid".
Rinse and serve
Once the lid is removed, you want cut the muscle on the other side of the shell. Once the oyster is free it is ready to be enjoyed!

Tips and Tricks!

Always remember to wear gloves (or at least hold with a tea towel). Every oyster is different, if you are having to force it try a slightly different angle. Freezing or cooking oysters in the shell will cause them to open on most occassions. Some people frown on these methods as it can affect the texture, however, some people also prefer oysters this way... Be your own judge!
